Mediterranean Chicken & Spinach Wrap

Ingredients:

  • Wrap:
    • 1 large whole wheat wrap or tortilla
  • Fillings:
    • 1/2 cup baby spinach
    • 1/4 cup arugula
    • 1/2 cup cooked chicken breast, sliced or shredded (seasoned as preferred)
    • 2 tablespoons hummus (store-bought or homemade)
    • 1/4 cucumber, thinly sliced
    • 1/4 red bell pepper, thinly sliced
    • 2 tablespoons crumbled feta cheese (optional for added flavour)

Instructions:

  1. Prepare the Wrap Base: Lay the whole wheat wrap flat on a clean surface. Spread a thin layer of hummus over the centre of the wrap, leaving space at the edges for easier rolling.
  2. Add the Greens: Place baby spinach and arugula on top of the hummus layer to form a bed of fresh greens.
  3. Layer the Fillings: Add the sliced or shredded chicken on top of the greens, followed by the cucumber slices, bell pepper strips, and crumbled feta cheese.
  4. Wrap It Up: Fold in the sides of the wrap, then tightly roll it from the bottom up to create a secure wrap. Slice in half diagonally for easy eating.
