Veggie & Hummus Power Wrap

Ingredients:

  • Wrap:
    • 1 large tortilla wrap (whole wheat or regular)
  • Fillings:
    • 2 tablespoons hummus (store-bought or homemade)
    • 1/2 cup baby spinach
    • 1/4 cup shredded carrots
    • 1/4 cucumber, thinly sliced
    • 1/4 red bell pepper, thinly sliced
    • 1/4 cup thinly sliced red cabbage

Instructions:

  • Prepare the Wrap Base: Lay the tortilla wrap flat on a clean surface. Spread an even layer of hummus over the centre of the wrap, leaving a little space at the edges for easier rolling.
  • Add the Greens and Veggies: Layer the baby spinach on top of the hummus, followed by the shredded carrots, cucumber slices, bell pepper, and red cabbage. Spread the veggies evenly to ensure every bite is filled with flavour and crunch.
  • Wrap It Up: Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a secure wrap.
  • Serve and Enjoy: Slice the wrap in half if desired and enjoy immediately! This wrap can also be packed in foil or parchment paper for an easy, on-the-go meal.
